The proofer comes complete with 8 removable trays which, when all are fitted, makes the unit ideal for proofing pastries. When 4 trays are removed, each tray can hold combinations of tins, bowls and bannetons, see the table below for examples.
The unit is thermostatically controlled and will keep the chamber humid when water is poured into the water tray at the bottom of the unit. This gives perfect proving conditions - no need for airing cupboards or damp teatowels.
