500g Oval Spiral-Surface Brotform or Proofing Basket

A 500g spiral-patterned round brotform (German for proofing basket) made from nothing more than sustainably grown wood-fibre and nothing else making them 100% biodegradable. They are used to support the dough while it rises (proofs) to give it improved structure, just before it goes into the oven to bake.

Brotforms (Brotformen to use correct German) from wood-fibre need only to be dusted with flour (we use rye) to prevent the dough from sticking. Between use, they should be stacked in a clean and dry place. Occasionally the brotform will benefit from having any excess, dried on flour brushed off with our special brushes.

Just before the dough goes in the oven, it should be tipped out of the brotform and it is usual for a pattern to be cut into it for improved crust and enhanced appearance using a tool called a lame or grignette.
