Honey–Glazed Carrots & Parsnips 

A ridiculously easy side dish that looks like you've made an effort.

These sticky, sweet-and-spicy honey–glazed carrots & parsnips are your shortcut to side–dish stardom.

(The hot honey was tempered by the sweetness of the veg but if you aren't feeling for hot honey, simply swap to any honey in the Black Bee range that suits your inclination)

  •  Make-ahead magic

    These veggies are meal-prep gold during the festive rush.

    Keep them in the fridge for 1 - 2 days ahead of time  (just reheat in a hot oven), or if you are terribly organized you can make them up to weeks in advance and stow them in the freezer (freeze after glazing and roast straight from frozen, no faff)

    Because Christmas Day should be about presents, prosecco and avoiding arguments over the remote, not peeling veg!

 

Method

    1. Prep the veg:
      Pop your carrots and parsnips onto your baking tray (we used our Nordic Ware tray).
      If a parsnip looks like it belongs in a strongman competition, halve it. We want everyone roasting at the same pace.
    2. Oil & season:
      Drizzle with Cotswold Gold Rapeseed Oil, sprinkle with salt & pepper and give everything a little roll around so the veggies are evenly coated.
    3. Roast:
      Into a fan oven at 200°C they go.
      Roast for 10 minutes, turn them, roast for another 10 minutes. Timings may vary depending on the size of your veggies so keep an eye on them.
    4. Honey time:
      Once they’re almost tender, drizzle over enough of the honey to coat (but not to drown them).
      Pop back in for 5 minutes, until everything is glossy, sticky and caramelised.
    5. Serve & bask in glory.
      Make sure you let them cool slightly before serving, as the honey glaze will be piping hot.

    Variation

  • Use whatever honey suits your taste.
