Wood-Fibre Brotforms or Proofing Baskets

Proofing baskets (known in France as a banneton and in Germany as a Brotform) for supporting dough during its final rise (or proof) come in a variety of materials, shapes and sizes. These ecological Brotforms are made only from wood-fibre (or wood-pulp) which is compressed to make strong baskets most commonly used for sourdough, but also useful for yeast-based dough too. They should be dusted with flour before adding the shaped dough - and we think rye is best for this. The dough is then placed into the basket upside down, allowed to rise and then when ready, gently tipped out onto the base of a cloche, peel or baking sheet before putting it in the oven for baking.

Made from wood-fibre only with no glues or other ingredients, these baskets are fully biodegradable and sustainable.
