Bermondsey Street Bees was founded 10 years ago by Dale Gibson, when he started keeping bees on a fourth floor rooftop, overlooking the London Shard. Since then, this tiny artisan business has won many accolades including “Best Honey in London’, ‘Britain’s Top 50 Foods’, ‘ Small Artisan Producer of The Year’ and the ‘Urban Food Awards’.
Honey is a once a year harvest and very quickly we had an annual waiting list for our rooftop honey. We realised that we knew other great beekeepers all over the country, many living in such remote areas that they found it hard to market their produce. So, in addition to selling honey from our own town and country hives, we set up our Metro & Union labels to source exceptional single-source English raw honeys. We travel widely looking for exciting, unusual and characterful honeys, always buying direct from individual producers we know and trust. Just like wine or olive oil, each honey is a product of its terroir and has its own story to tell.
In direct contrast to the cheap blended and pasteurised honey which supermarkets sell, our honeys are always single source (i.e. unblended) and raw (i.e. cold filtered.) Healthy, well-nourished bees make wonderful honey, which we simply spin, cold-filter and jar. This preserves both the well- documented nutritional benefits and the complex flavours, many of which come from delicate volatiles damaged by heating. We will only buy honey from beekeepers who prioritise welfare and keep their hives in locations where there is sustainable forage.
