Baker's peels are also known as bread or pizza paddles are used for sliding bread or pizza dough into and out from the oven. They come in a wide range of sies and styles, long handled ones are typically for professional deck ovens or wood-fired ovens and the shorter ones are suitable for domestic and micro-bakery ovens. They all work in a similar way, they should be well dusted with flour, our choice is semolina, then slid under the dough and slipped into the oven for baking and the reverse when done. Accessories include the flipping board which is use for moving couche-proofed dough onto the peel.
