Fleur de Sel
"Fleur de Sel", or Flower of Salt, is a delicate finishing salt known for its bright, fine, naturally white crystals. The Fleur de Sel is carefully harvested by hand off the top of the salt marches. It forms in the afternoon on the surface of the salt marshes through the evaporation of the salt water in the salt pans. Resembling a thin layer of ice, this sea salt is delicately gathered off the top and laid out to dry. Naturally white and fine, the fleur de sel precious crystals are used to season any dish at the table right before serving or as a finishing touch on pastries and deserts. The Fleur de Sel is unique in its taste and its ability to bring out the natural flavors of the food, instead of hiding in flavors with a sodium aftertaste.
Each crystal is unique in size; smaller ones deliver an instant surge of flavour to foods, and larger crystals dissolve slowly releasing their flavour directly on the palate. This beautifully enhances the flavour of all foods, making the Fleur de Sel the best salt for seasoning at the table and before serving.
Standing at a moisture content of between 6% and 7%, the crystals have the unique ability to resist the exterior moisture, keeping their composition even on steaming and juicy foods.
