Einkorn is the earliest type of wheat grown and eaten by mankind. The tall elegant stalks produce a flat seed head with two symmetrical rows of very small grains. Organic Wholemeal Einkorn flour from Gilchester Organics is excellent for rustic style breads and pizza bases and has a deep, earthy flavour.
