Rooted in Northumberland, milled at Duchess Farms. Gilchesters Organics was founded in 2007 at Gilchesters Farm near Hadrian’s Wall, by organic pioneers Andrew and Sybille Wilkinson. In early 2023 the brand moved to Duchess Farms, who relocated the original milling equipment and continue the same small‑batch, stone-milled approach on UK organic grain — still sourcing grain from the original founders alongside an expanding network of organic farms.
Why you’ll like baking with it: Expect a surprisingly light crumb for wholemeal, with big wheaty flavour (add a touch more water than roller‑milled flour). It’s a great match for bread and sourdough, and shines in slower ferments where flavour has time to develop.
Best for: Bread, Sourdough.
What to expect: Full, wheaty flavour and a naturally creamy colour.
Handling: Wholemeal is naturally thirstier — nudge hydration up and allow a longer rest to fully hydrate bran (autolyse).
Milling note:Stoneground on organic grain (no bleaching agents; no improvers).
Pack size: 15kg.
Quick tip: If you’re switching from roller‑milled flour, adjust water by feel — give the dough 10–15 minutes to settle, then tweak.
