The specialist yeast from LeSaffre/DCL, LeSaffre Saf-Gold is an Osmotolerant yeast and is the recognised international reference instant yeast for high sugar or enriched recipes, in 500g or 10kg vacuum pack. It is also effective as a general purpose instant yeast.
What does osmotolerant yeast do? Most yeast is retarded or inhibited by high sugar recipes, making it dry out through osmosis. LeSaffre Osmotolerant Saf-Gold yeast is specially formulated to handle high sugar (above 5%) recipes, to give a vigorous rise in your brioches, panettone. (This drying action caused by the presence of high sugar is why honey doesn't go off: any unwanted bacteria are dried out and killed).
This yeast starts working immediately on contact with flour/sugar/water mixes and relishes high sugar conditions.
Once opened the packs must be folded/clipped to minimise ingress of air and moisture and kept refrigerated.
Ingredients: yeast (saccharomyces cerevisae), emulsifier: sorbitan monostearate (E491), flour treatment agent: ascorbic acid (E300).
Gluten: Does LeSaffre Instant Osmotolerant (Saf-Gold) Yeast contain gluten? No, none of the LeSaffre dry instant or dry active yeasts contain gluten. All are suitable for GF diet but they are not certified.
