Molino Bongermino Grano Arso (burnt wheat) flour is a stoneground durum wheat flour that has been carefully toasted before milling. Developed by accident by Puglian (Apulian) farmers collecting burnt grains left in the field after stubble burning. Use it to replace about 10% (you can experiment), of the flour in your bread recipe with Grano Arso for a luxurious taste and smell reminiscent of toast, almonds, hazelnuts and roasted coffee: it's a deliciously complex flavour to enhance your loaf.
