Mulino Marino Organic Taragna Flour (Maize/Buckwheat)

Mulino Marino Organic Wholemeal Taragna Flour is a traditional Italian flour made from a stone-ground blend of 70% coarse maize and 30% buckwheat, produced from certified organic grain and milled slowly using natural stone mills.

Taragna flour is best known for polenta taragna, a hearty Alpine dish from northern Italy, but its flavour and texture also make it well suited to rustic biscuits, shortbreads (such as sbrisolina and meliga), and for breading or frying. The coarse maize gives structure and bite, while the buckwheat contributes depth, earthiness and colour.

The flour is not heat-treated and contains no additives, preserving the natural character of the grain, including the live maize germ. As with all Mulino Marino flours, cleaning, milling and packaging are carried out entirely at the mill in Piedmont, Italy.

Taragna flour is naturally gluten-free in formulation, but due to milling and handling it may contain traces of gluten, along with traces of soy and mustard. It is therefore suitable for traditional and flavour-led baking, but not for certified gluten-free diets.

For polenta, Taragna flour requires long, slow cooking (around 120 minutes) to fully hydrate the maize and buckwheat and develop its characteristic creamy yet textured finish.
