Rolle Mühle Organic Brown Spelt Flour 10kg

This organic brown spelt flour (Dinkelmehl 1050) from Rolle Mühle is milled from selected organic spelt grain to a medium level of refinement. On the bag it is labelled “Bio Dinkelmehl 1050”, indicating its position in the German milling system between refined white spelt and wholemeal spelt flours.

Brown spelt flour retains more of the bran and germ than white spelt (Type 630), giving a deeper colour, fuller flavour and a slightly more substantial texture. At the same time, it is not as coarse or dense as wholemeal spelt, so doughs are easier to handle and produce lively, open crumb when mixed and fermented well.

Use this flour in artisan spelt loaves, rustic batards, multigrain breads and enriched doughs where you want spelt’s distinctive nutty, sweet aroma but with more presence and structure than a white spelt. It responds well to extended fermentation and hydration tailored to spelt’s gluten profile, and can be blended with wheat flours to balance strength and rise.
