Organic white spelt flour from Rolle Mühle in southern Germany, labelled on the bag as Bio Dinkelmehl 630. This is a refined spelt flour with a lighter colour and smoother texture than wholemeal spelt.
Type 630 in the German system indicates a balanced, moderately refined flour with good baking strength and flavour. Ideal for everyday spelt breads, softer loaves, enriched doughs and rolls where spelt character is wanted without wholemeal density.
