Artisan Baker for Bradford Bakery

Bradford Bakery is a new hand–crafted bakery and café opening in Bradford City Centre, West Yorkshire specialising in European style sourdough and yeasted breads, buns, laminated and savoury pastries. We will serve our own bakery shop and distribute our products to customers that appreciate the best quality hand-crafted bread and Viennoiserie.



We are actively recruiting experienced talented Artisan Bakers with a passion for and knowledge of all aspects of artisan bread, with experience of working with long fermented sourdough breads and keen to produce an exotic range of patisseries. We are looking for candidates who love bread, and strive to maintain the highest standards of production, both in terms of the quality and consistency of products and of the hygiene practices.

The ideal candidate will have experience in putting procedures in place and maintaining wholesale contracts. There will be responsibility for bread and pastry production, fulfilling orders for special occasions, as well as the potential for creating new recipes and a share of the myriad other jobs that we all do to keep the place running.
You will need to be flexible with regards to shift patterns (early morning starts, no night shifts), Permanent contract, hours will be 40-45 per week, physically fit with stamina to stand for long periods and lift heavy bags and food containers and happy to deal with customers.

A flexible and positive approach combined with sufficient practical skills to work independently from the beginning are required as the business gets up and running.

Qualifications Required   
  • Experience is essential in the following areas:

    • Strong and extensive knowledge about artisan techniques
    • Extensive knowledge about bread science, baker’s percentage, formula development, working with wet doughs, slow fermentation and alternative grains
    • Experience in traditional bread making using levian, biga, poolish and sourdough
    • Experience in preparation of pre-ferments and final doughs, handling long fermentation doughs and rustic doughs yeasted breads, laminated and savoury pastries
    • Experience in weighing, scaling, mixing, bulk fermentation, folding, dividing, pre-shaping and hand moulding, scoring, proofing, baking and cooling
    • Experience in creative pastry making and baking, exotic range of patisseries
    • Experience in using mechanical scale, planetary and spiral mixers, retarder proofer, proving cabinet, BDM, dough sheeter and deck oven
    • Ability in organising the daily production schedule and maintaining a clean and tidy work area throughout the production process
    • Ability in managing portion control on all individual items of bread and pastry
    • Be presentable and able to talk to Bradford Bakery visitors in a professional manner
    • Adhere to the Bradford Bakery cleaning rota and inform the manager of any housekeeping issues within the production area
    • Be creative and willing to be involved in new product development from conception through to costing and delivery of products

Personal Qualities

  • You must be reliable and punctual, with good planning and organisational skills, accurate and precised. You must pay strong attention to detail and be able to work efficiently. The right candidate selected for the role must be creative and enthusiastic, passionate about craft baking and have natural ability for baking. We are open to people who are passionate and would like to create an original brand! Successful applicant will be scrupulously honest, energetic, have a sense of humour and a commitment to high standards and genuine quality. You will be very able to work as a team member with excellent communication skills. Willing to be flexible and support others in the team. You will be helping to manage stock levels and rotation of stock. i.e. ensuring deliveries are checked and stored appropriately and informing bakery manager of stock shortages and any stock issues as well as taking a monthly stock level. Good spoken and written communication skills and previous experience working as an artisan baker are required. Must also have a strong knowledge of food hygiene standards, and follow all policies regarding health and safety.
