Summary: Wild Hearth Bakery is an award winning wood-fired sourdough bakery in the beautiful town of Comrie on the edge of the Scottish Highlands. Sourdough is our passion and our wood-fired oven is the heart of our bakery.

Demand for our products has been extraordinary and we are looking for talented bakers to help us expand to meet that demand.

We have a reputation amongst Michelin chefs as the suppliers of the highest quality breads and pastries in the central belt and Highlands of Scotland. We sell to restaurants, caterers, shops, cafes and hotels, and direct to the public at farmers’ markets and events.

The most important things to us are flavour, rustic beauty, simplicity…and sourdough. Even our viennoiserie is 100% naturally leavened.

Our aim is to attract and retain the most passionate and talented artisan bakers, and here are some reasons we can do that. The bakery is in the beautiful town of Comrie at the foothills of the Scottish Highlands. Comrie is well known for its strong community and is well placed for easy access to Edinburgh and Glasgow and the wilder north. The bake room itself is a lovely space and we have invested in the best equipment to ensure our talents and hard work are supported by the tools we use. We work daytime hours and have a fabulous team with diverse experience in food and high-quality artisan baking, many with a particular love of the outdoors that Scotland has in abundance. The future is looking bright for Wild Hearth, with exciting new developments either in train or on the horizon. These include working with Scotland The Bread, a project to re-establish a local organic grain economy in Scotland, and plans to install a New American Stone Mill so we can work directly with farmers. We are all lovers of good food, and we eat a cooked lunch every day, mostly using produce from the local organic market garden.

Remuneration: £18720-19760 pa for 40 hours per week depending on skills and experience. A longer or shorter week is possible.

Job Description: The role is primarily as a baker, which will include all aspects of bread production as determined by the head baker. It may also include the production of naturally leavened pastries.

We are looking for up to three bakers. At least one position will be permanent. Others may be on a contract basis pending consideration of permanent employment.

Expected Hours: Our standard working week is 40 hours. Most of our work is done between the hours of 7 am and 7pm, and a basic shift is 10 hours but may be longer if necessary. A longer or shorter week is possible by negotiation.

Exceptional quality is absolutely critical to our continued success and you would be expected to do your bit to achieve this. You will need to work hard, learn continuously, contribute ideas for the constant improvement of our products and the way we work, and be a respected member of a vibrant team. In doing so, you will have the opportunity to learn skills only available in the highest quality artisan bakeries in the UK and internationally.

Qualifications are not essential but may be an advantage.

You must have:
• Passion
• Demonstrated prior learning and experience of sourdough bread making over at least 12 months, whether formal or informal
• Permission to work in the UK
• Willingness to relocate to the vicinity of the bakery

The following would be an advantage:
• Demonstrated affinity with good food and flavour
• Knowledge of, or keen interest in, sourdough microbiology and dough rheology
• 1 year or longer experience in a busy artisan bakery
• An active social media presence
