Summary: Wild Hearth Bakery is a wood-fired sourdough bakery in the beautiful town of Comrie on the edge of the Scottish Highlands. Sourdough is our passion and our wood-fired oven is the heart of our bakery. After only a year in operation we have a reputation amongst Michelin chefs as the suppliers of the highest quality breads available in the central belt and Highlands of Scotland. Job Description: We are looking for passionate people to join us baking beautiful sourdough bread and pastries in a stunning part of the world.

We are looking for people who have a genuine love of, and feeling for, food. We are not just technicians – we love good bread because we love good food.

The most important things to us are flavour, rustic beauty, simplicity…and sourdough.

You will need to work hard, learn continuously, contribute ideas for the constant improvement of our products and the way we work, and be a member of a vibrant team.

Most of our work is done between the hours of 7 am and 7pm, and a basic shift is 10 hours but may be longer if necessary.

Full time is preferred but part time will be considered.

You must have: • Passion • Demonstrated prior learning and experience of sourdough bread making over at least 12 months, whether formal or informal • Willingness to relocate to the vicinity of the bakery

The following would be an advantage: • Demonstrated affinity with food and flavour • Knowledge of, or keen interest in, sourdough microbiology and dough rheology • 1 year or longer experience in a busy artisan bakery • Solid experience making laminated pastries (croissant etc) • Ability to formulate recipes • Ability to use spreadsheets and other software • An active social media presence

Contract: Permanent

Expected Hours: Approx. 40 hours/week, between 7am and 7pm

Personal Qualities: Dedication to quality, conscientiousness, good humour, willingness to work hard in a fun environment, openness to change, learning and continuous improvement

Formal qualifications not required but may be an advantage
