Back to Basics with an Easy White Loaf


1st loaf

There are so many recipes you could choose from to make your first loaf of bread.  Make a great one and you will be hooked for life, but make a bad one and it can just as easily put you off completely.  When I told my  youngest daughter, who is seven, that I was photographing a step by step guide she immediately offered to be my assistant, pointing out that although she had helped me make bread, she had never yet made one all by herself. She couldn't stop smiling, and I thought she would burst with pride when she took it out of the oven!

That feeling of making  your own bread never changes.

My top tips are to weigh your ingredients carefully, and to use a digital thermometer to get the waters temperature correct.

RECIPE

*a little butter or vegetable oil for greasing pan

*a little extra vegetable oil for kneading

METHOD

Step 1 In a large stainless steel bowl mix the Diax, flour, yeast and salt.

Step 2 Stir in the tepid water and oil

Step 3 Knead either with a stand mixer for about 6 mins, or use your hands to knead your dough for about 10 mins, on a lightly oiled surface until the dough has a silky texture

STEP 3

Step 4 Pop your dough into an bowl which has been lightly oiled and cover it with a damp cloth and leave it to rise until it is doubled in size.

Step 5 Oil or butter a 2lb loaf tin (I love the effect of butter but it is personal preference).

Step 6  Knock back your dough then gently roll the dough into a thick sausage shape by opening it up then folding it over and then rolling.

Step 7 Drop your dough seam side down into the tin, cover and prove for 1 hr more on the side until it has doubled in size.

STEP 7

Step 8 Heat oven to 220C/200C fan/gas 7.

 Step 9 Lightly dust the loaf with flour and cut a slash in the top with a lame.

STEP 9

Step 10 Bake for 30-35 minutes until golden brown. Your loaf should sound hollow when tapped underneath. Turn it out while still warm and cool on a wire rack.
