Job Description: We are looking for up to three bakers: one full time permanent position to start as soon as possible; one full time permanent position to start in March; and one summer contract to commence in April as a nine month position in the first instance, with the potential to extend and/or become permanent should opportunity allow. We encourage all staff to gain breadth of experience by working in both bread and pastry (currently limited to viennoiserie) but are open to applicants keen to focus solely on either bread or pastry production.

As a baker at Wild Hearth you’ll need to be driven and efficient, working both independently and as part of a team. Your duties will include:

* Mixing, scaling and shaping of naturally leavened doughs
* Lamination and finishing of naturally leavened pastries
* Oven work (both rack and wood-fired deck oven)
* Team-based product development and planning
* Keeping up to date with cleaning and safety schedules
* Communicating effectively with other staff to maintain a positive work environment and ensure the smooth running of the bakery

Our typical working week is currently Monday to Friday, with most work done between the hours of 7 a.m. to 7 p.m. Shifts are 10 hours in length, and a standard working week for full time staff is 4 days (40 hours). Your salary will be based on a 40-hour week, subject to skill level and experience. Staff will occasionally be required to work weekend shifts to cover starter maintenance and the occasional weekend bake, and shift lengths may increase, if necessary, during busy periods.

Personal Qualities: While professional baking experience is preferred, more importantly you will need a passion for sourdough and the desire to work hard, learn continuously, and to contribute ideas for the constant improvement of our products and the way we work. All applicants must have permission to work in the UK and be willing to relocate to the vicinity of the bakery.

Prior experience working in artisan bakeries, with sourdough bread, and with laminated doughs is not essential but will be an advantage.
