Head of Pastry for Forge Bakehouse

We are a sourdough bakery and patisserie in Sheffield. We also run bread classes, pizza and pie nights plus supper clubs. We like proper food, made from scratch, so you know exactly what's in it.



We are looking for someone with a passion for butter, sugar and eggs! Someone who has a wicked sense for detail and loves to work creatively with a team to get the best out of everyone. You will need to be happy working independently and autonomously as our pastry section is housed in a separate little building at our Abbeydale Road bakery. It’s a cool and calm place where you can listen to whatever radio station you please (oh the joy!)

The Head of Pastry oversees the development and production of pastry goods in the bakery. They work collaboratively with other section heads and Martha (Director) to develop new and seasonal products and take forward business initiatives. This is definitely a role for an experienced and qualified person with management experience.


•    Scheduling pastry production and special orders
•    Bake and prepare pastry menu
•    Setting up bakery counter ready for sale, discussing menu with FOH staff
•    Daily and deep cleaning and record keeping
•    Managing stock rotation and overseeing ordering for pastry section

Managing Others
•    Cultivate ways of working to improve performance, product, time management, service quality and staff relations
•    Induct and train new pastry staff
•    Develop staff by modelling good practice, coaching and periodic formal review
•    Maintain and improve the knowledge base of staff in other sections
•    Contribute to regular communications across the bakery
•    Plan staff rotas, cover and annual leave arrangements
•    Provide first port of call for shift cover

Product and Business Development
•    Research and generate ideas for new products, menus and special events
•    Meet regularly with Martha (Director) and other Section Heads

Health, Safety and Hygiene
•    Maintain health, safety and hygiene standards
•    Ensure accurate records of daily, deep cleaning and temperature records
•    Manage all food storage, preparation and maintenance reporting in line with HACCP plan
•    Ensure appropriate attire and personal hygiene standards are met by all members of the pastry section
•    Audit health, safety and hygiene records

Qualifications Required   


Personal Qualities

  •  Essential Skills and Experience:
    •    Managing a small team of pastry chefs (minimum 1 year)
    •    Some regular and recent experience working with laminated doughs and viennoiserie
    •    Complete confidence creating a variety of custards, sweet and savoury pastry doughs, tart and doughnut fillings
    •    Product development and costing
    •    Stock management
    •    Collaborative approach to working with colleagues
    •    Constructive and nurturing approach to teaching and developing others
    •    A focus on precision and accuracy with all tasks
    •    Experience of improving efficiency and workflow

    •    Skills in chocolate and sugar work
    •    Experience of restaurant style plated desserts and dish development
    •    Experience with HACCP documentation and auditing
    •    Managing responsibility for review and development of staff
