Hugh and the River Cottage Team have a 65 acre organic farm near Axminster in Devon. The farm hosts a wide variety of courses including Bread, Advanced Bread and Build and Bake, where you learn to make you own earth oven.  Gluten free and Advanced Gluten free baking courses are also available. The courses run throughout the year and prices start at £195 per person.

The Bread day is hands on, and is built around our basic bread method and the course will show you how this can be adapted with infinite variations. The course covers other breads such as focaccia and flatbreads, as well as pizza, some of which you will bake in our wood-fired oven, and eat as part of an informal lunch, along with delicious dishes prepared by the River Cottage Kitchen.

Advanced Bread is taught by Aidan Chapman, artisan baker and Real Bread Campaign ambassador. You’ll learn how to create your own bread formulas, making delicious enriched doughs for croissants and brioche and sourdough pizzas to cook in our wood-fired oven.  You’ll also cover ferments, such as biga, poolish and sponges, a way to make your bread taste amazing and add shelf life to your loaf. 

Our Build & Bake course teaches you how to build an earth oven, starting with digging local clay before you tread the clay and together, you build the oven. The oven works excellently in your garden as an attractive feature radiating warmth for those chilly summer nights as well as being the perfect device to roast fish, vegetables, meat and your own bread. Once you have built the oven you learn how to make and bake the perfect loaf.

Our Gluten Free Cookery days at River Cottage, led by nutritionist Naomi Devlin, are a combination of hands-on cookery and demonstration-based recipes, giving you the support and tuition necessary to follow a gluten free diet. The days are full of advice and recipes, using gluten free flours and other wholegrain flours.  You will leave with a fragrant booty of goodies to enjoy over the following days!

Courses run daily from 10am-5pm.
