Job Description: We are looking for a Senior Artisan Baker to join us in starting a new and exciting project in Altrincham. We are going to blur the lines between a bakery, café, bistro and specialty coffee shop and in doing so we think we will redefine what people expect from each of these. There’s nothing quite like this in the UK and it is more in line with what you might find in Sydney, Melbourne or New York. Altrincham is fast developing as a centre of food and drink excellence and we have a perfectly located large site. It will be a high profile opening and this is the perfect job for an ambitious baker who places quality above all else and wants the largest shop window (literally) in the North West to display their talents.
Our starting point in 2011 was speciality coffee and we baked all our own cakes from the outset. We started to bake sourdough in 2013 when we couldn’t buy any bread we wanted to use in the local wholesale market. We were very lucky and our first baker taught us well and no one bakes better bread than us in Manchester (strictly organic flour, water and salt). We bake in relatively small quantities (everything is slow proved) and we only use our bread internally (apart from supplying Hawksmoor for a while and we only did that because we were fans of their restaurant).
This will be the model going forward.

We are building a brand new bakery to be housed in public view in the centre of our new site. It will have all new state of the art kit to work on. You will be part of the team setting this space up.
There will be early mornings but no night shifts.
We will concentrate on small-batch production pushing quality to the fore.
We plan to work more with heritage grains and on-site milling to push our product to the next level.
Apart from high basic wages you will also have a share of the tips paid by diners. It’s a big space and this could be a considerable bonus worth thousands more a year.
Our ambition levels are high. We want to be the best and we want the best people to join us.
We can’t say too much here because the project is so new but you will be joining a multi-skilled artisan team working across different fields to create a whole of array of hand made products.

You must have two years hands-on traditional baking experience with an advanced skill set and depth of knowledge.
You must be willing to join our team and fit in to the way we do things. We don’t need someone to run things for us, we need someone to join a talented team.
You need to live locally in South Manchester or East Cheshire.
You need to have the energy and ambition to commit to a new project and to have the determination to help us make it succeed to the level we are targeting however much work that entails. This may not be a job with precise hours, but the victory when it comes will be worth it.

Start date is flexible but can be as soon as June 12. The role will be located initially on the border of Chorlton and Stretford before moving to Altrincham in September 2017.
Expected Hours: 40-45 hours per week. 6.30 starts
Personal Qualities: The obvious skill set for a job of this level.
2 years minimum experience shaping bread by hand and a genuine love of the craft is the absolute minimum. We are looking for a senior team member and this is reflected in the wage offered so experience should be in line with this.
