Sometimes, when I get a minute, I look back at where we started and marvel at how far BakeryBits has come. Of course my next thought is about all the other things that we want to do, but as a small company we really pride ourselves on listening to you, our customers and your valuable feedback. So when a customer recently asked about us stocking ethically sourced and fresh spices for baking with we looked into it and I am delighted to say that we now have a lovely wide range of organic and Fairtrade spices to bake with from Steenbergs.

One of my favourite spices is cumin, excellent in many foods from curries to breads, so I asked Vanessa to come up with a simple recipe for cumin rolls, and if you buy the cumin roll kit this week we’ll send you a free pot of these wonderful Egyptian seeds to add into your rolls to try.

Cumin has been used in baking for thousands of years. It is a deep aromatic slightly peppery spice related to caraway, as well as parsley and dill and it belongs to belong to the same plant family (Umbelliferae). Cumin, which is native to Egypt, is mentioned in both the new and the Old Testament and is used in baking across the Middle East.

The deeply fragrant, slightly peppery flavour is increased by lightly toasting the seeds before using them in this recipe, and I’ve used sultanas to sweeten the rolls. You could just pop these rolls on a tray to bake but they wouldn’t turn out the same. It is proofing the rolls in the base of the La cloche that gives the shape of a flower, and baking them in the cloche ensures that they have an even bake, with a fully developed crust, but still retains the moistness of the crumb.
