What makes a great chopping board?

I love chopping boards as they get older.  The more lines they get from cutting loaves, the more I love them, but not all chopping boards are created equal.

I like my boards to be heavy, and robust.  I love to feel as though the wood will outlast me.  Perhaps it is because a tree has been sacrificed to make a good board, and yes a good board is always wooden. I really love this chopping board as it is so beautifully made and a really heavy made circular wooden block made from maple hardwood by Michigan Maple - which is one of the oldest manufacturers of chopping boards and butchers' blocks in US. The board, measuring 15" across and 2" thick (38cm across by 5cm thick) is heavy and tough, designed for cutting chopping and even cleaving, and yes  - it will last a life-time. Made using maple grown on Michigan Maple's own land, the board is made from laminated end-grain,  from lots of short pieces with grain set vertically like traditional butchers' blocks.  \

It is a wonderful piece of artisan carpentry.

My top tip is not to use allot of water to clean a board a wipe with a cloth and if there is somethings spilled or odorous then I tend to sprinkle a liberal quantity of sea salt on the bit that needs it and leave it overnight.
