The Bread School

Hi my name is James Mettam and I work professionally as a Baker at Britain's best farm shop. I am a qualified Baker and it is my aim to teach people how to make good honest 'Real Bread' using just Flour, Water, Salt & Yeast. No additives are needed to make great bread. I hold a Chartered Institute of Environmental Health Level 2 Food Safety Certificate. The artisan bread courses are designed to show both novice and seasoned home bakers how to make wonderful artisan bread at my home kitchen or yours using simple equipment. You will use proven hand made methods to create wonderful bread. No mixers required. Each artisan bread course covers the whole process of bread making from start to finish. We will be using flour supplied by Caudwell's Mill, yeast, Cornish sea salt and good old Derbyshire tap water. A typical course will involve you having hands on experience of making a variety of types of bread such as tinned loaves, cobs, pizza and baguettes. Courses can also be tailored to individual requirements to include sourdough, long ferments, French breads and Italian breads. Each participant will receive recipes from the day, a dough scraper, a tin of Saf-Levure dried yeast and of course all the bread that you make on the day. I will supply all the ingredients, utensils and aprons. Lunch will be included using my fabulous Chadwick Oven. This will be Traditional Napoli Pizza. The courses are both informal and fun. Course Fee . . . ùœ95 per person with a maximum of 2 students for courses held at my home 'The Bread School'. More people can be accommodated according to the size of the course venue.
