Trainee Artisan Baker for The Welbeck Bakehouse

The Welbeck Bakehouse is an award-winning Artisan bakery nestled in the heart of the picturesque and historic Welbeck Estate in Nottinghamshire. We pride ourselves on producing exceptional hand-crafted breads and Viennoiserie on a daily basis for restaurants, cafes and delicatessens across the East Midlands.

We are looking for that special someone with lots of passion and a keen eye for detail to join our esteemed bakery team. This is a very rare opportunity for a baker looking to further their experience in the artisan industry.

The main duty in this position is to assist the head baker in all aspects of the preparation and production of bread and pastries in the bakery. We also expect bakers to be able to help in planning the production timetable as well as working out dough quantities from the specified recipe sheets.

•    Mix, shape and bake bread according to the Bakehouse recipes and learn new techniques and methods where appropriate.
•    Be well organised throughout the production process, maintaining a clean and tidy work area and work to the specified production schedule.
•    Help manage stock levels and rotation of stock. i.e. ensuring deliveries are checked and stored appropriately and informing production manager of stock shortages and any stock issues as well as taking a monthly stock level.
•    Manage portion control on all individual items of bread and pastry.
•    Be presentable and able to talk to Bakehouse visitors in a professional manner.
•    Have good attention to detail
•    Adhere to the Bakehouse cleaning rota and inform the production manager of any housekeeping issues within the production area.
•    Be creative and willing to be involved in new product development from conception through to costing and delivery of products.
•    Be involved in ongoing professional training and be willing to train and mentor less experienced members of staff.

Qualifications Required   
A previous catering background is essential.

  • Ideally, have some experience of a range of sourdoughs and long fermentation breads
  • The ideal candidate will have excellent attention to detail, and preferably experience with viennoiserie.
  • Knowledge of/experience of working with artisanal food
  • Organisation and time management skills.
