Sekowa Special Baking Ferment Gluten Free (Sekowa Mais Spezial Backferment, Glutenfrei) is the gluten-free version of the famous German bread-proofing product or ferment containing natural yeasts and enzymes from organic corn and pea flour and honey, and contains no commercial fast-acting yeasts. Based on the standard Sekowa Special Baking Ferment, this version contains no wheat making it suitable for those wishing to avoid wheat gluten and comes in a 250g tub.
It is used around the world and in Germany and Denmark in particular, to make a starter to add to a bread recipe, and some use it as a direct dried-yeast alternative.
