This 165g round cane mini banneton is a traditional rattan proofing basket for supporting small shaped doughs during their final prove. The mini round shape suits individual boules, small sourdough loaves and restaurant service-sized breads, helping the dough hold its structure before it is turned out for scoring and baking.
Cane bannetons leave the distinctive spiral pattern often associated with artisan sourdough. Dust the basket well before use with rice flour, rye flour or another suitable flour to help prevent sticking, then place the shaped dough seam-side up in the basket for its final prove.

After use, allow the banneton to dry fully, brush out any excess flour and store it in a dry place. Cane bannetons are for proving only and should not be put in the oven.
