Sugar Sand is a very small nibbed sugar, also known as nib sugar or hail sugar, used mainly for decorative finishes in baking. This C05 grade is finer again than standard nibbed sugar, giving a neat, delicate effect where you want visible sweetness and light crunch without the larger look of pearl sugar.
It is especially useful on smaller cakes, buns, pastries, cinnamon swirls, Chelsea buns and other sweet bakes where a fine sugary topping suits the scale of the bake better than larger nibs. Because the particles are smaller, the finish is more even and refined, while still adding texture and a little sparkle.
This C05 grade has a typical size range of 0.7-2.0mm, making it the most delicate of the three nibbed sugar styles in this range. It is a good choice when Belgian waffle sugar feels too large and standard pearl sugar still feels a little too bold.
