Beautiful green Queen olives from the small village of Mikines from Kalamata in southern Greece sliced open for flavour absorption with lemon, oregano and garlic. Succulent and tasty, steeped in Greek sunshine these olives with their stones are a treat. The farmers are keen to preserve the strength of their olives and quality of the fruit so only use mechanical equipment to keep the groves clear and use no chemicals. The olives are mostly hand-picked to prevent them from being damaged during November and December each year before being soaked in brine for 60 days to remove any natural bitterness. After soaking, these olives are sliced open (still with their stones) and packed with lemon, oregano and garlic ready for you to eat.
