Using Seeds and Flakes in your Bread

Seeds and flakes can be used in many ways in your bread. Harder seeds like wheat should be milled, flaked or put in a soaker of water, beer or similar to soften them before being added to your bread recipe. Others, such as sesame, pumpkin, sunflower, linseed and poppy are best mixed directly into the flour or they can be sprinkled on top of the loaf for decoration, crunch and flavour.
