The recognised international reference instant yeast for high sugar recipes (where the sugar content is above 5%), supplied in a 500g vacuum pack and made using selected non-GM strain cultured on natural GM-free substrates. The presence of sugar inhibits yeast by drying it out through osmosis. This yeast has been developed to cope with the drying action of sugar. (This drying action is why honey doesn't go off: any unwanted bacteria are dried out and killed).
This yeast starts working immediately on contact with flour/sugar/water mixes and relishes high sugar conditions.
Once opened the 500g packs must be folded/clipped to minimise ingress of air and moisture and kept refrigerated.
