Viron Organic Einkorn flour, 15kg
Viron organic einkorn is an ancient predecessor to wheat, first cultivated over 7000 years ago with barley and emmer. The flour is yellow-ish in colour and there are spicy hints in the flavour. Einkorn is nutritious, naturally containing 8 amino acids, carotenoids, magnesium, iron, zinc, phosphorous and calcium.
Einkorn is a much lower gluten flour than wheat so should be treated a little differently. Mix with a higher gluten flour like wheat or using a scalding technique. See the downloadable recipe from Viron.
