Organic fresh yeast in a handy 42g cube, or larger 1kg blocks for bakeries, this yeast has been made to the very highest standards, without chemical additives and all ingredients are guaranteed to be non-GMO. Selected yeast strains and lactic acid bacteria cultures are bred in a wholly organic nutrient solution made from organic grain, pure spring water and enzymes. All microorganisms and raw materials are guaranteed non-GMO.
The fermentation process uses no chemical additives and organic sunflower oil is used as an antifoaming agent. Since all plant equipment is steam-cleaned, disinfectants are unnecessary in the manufacturing process, even the wastewater from a full plant cleaning is free from contamination.
In our own tests, we found that the fresh yeast should be used in the same quantities as the non-organic fresh (compressed) yeast (between 10-15g for 500g flour), or twice the weight of dried yeast, (not 1 42g cube for 500g flour as the manufacturer suggests). The flavour is significantly better than the non-organic variety which is designed purely for fast fermentation rather than developed flavour. Try our milk loaf recipe here.
Vanessa Kimbell, our resident expert baker says “I always use organic yeast to bake my bread with. Whilst supermarket and commercial yeasts are fast acting, they have been designed in most instances for the Chorleywood industrial bread processes. In order to satisfy the demands of the modern baking industry, there have been numerous and extensive programmes for strain development of S.cerevisiae (Baker’s yeast) many of which have taken place using genetic manipulation technology. There are even some strains of yeast that have even been patented as laboratories have advanced and developed commercial yeasts using DNA modification. It’s not the kind of yeast I want to use in my bread. I’d rather use yeast where the fermentation process uses natural organic ingredients for my bread.”
Application: Use in the same way as non-organic fresh yeast, for best results, dissolve in the liquid at around 28°C.
Storage: Fresh yeast has a fairly short shelf-life, but never less than 7 days on delivery. Keep the unused yeast in your fridge: it should not be frozen.
Delivery: To ensure the yeast arrives in the best possible condition, if your order is scheduled to be packed on a Friday, we will hold your order until Monday (unless Saturday Guaranteed is chosen) so that the yeast spends as little time in transit to you as possible.
