Grown by Emily in Somerset, Hodmedod's Red quinoa has a firmer texture than white and nuttier flavour, making it an excellent compliment to white quinoa in salads or as a rice alternative. It adds colour and texture to soups and stews and can be home milled for flour.
Instructions: Rinse, cover with 2 parts water or stock for each 1 part quinoa, bring to the boil and simmer for 15 to 20 minutes. Add more water if necessary. The grains will swell to 2 to 3 times their original size. Red quinoa has a firmer texture than white and the two work well blended for salads or as a rice couscous alternative.
