From Mure and Peyrot, the world-leading producer of bakery knives, the Landaise lame or grignette is a professional but simple device designed to hold a standard stainless steel razor blade with easy change.

The holder is made from blue plastic and holds a stainless steel blade or lame which has each corner numbered from 1 to 4 to allow for rotation and maximum blade life. The very sharp blade makes this grignette ideal for rapid dough scoring.
