The RS201 is the larger Japanese sheeter, offering more capacity while still folding neatly into a briefcase-sized box for efficient storage. It uses a dual control system for precision: a coarse dial with steps of 2.5mm from 5mm to 25mm, and a fine dial with 0.5mm steps from 0mm to 5mm. This enables rolling from 5mm to 27mm in 0.5mm increments.

Supplied with a choice of boards: the standard 900x400mm white board (up to 600g dough, 1kg weight) or the heavy-duty 1000x400mm blue board (up to 1kg dough, 2.1kg weight). Both offer excellent results, with the heavy-duty board adding grip and versatility for pastry and pasta as well as laminated doughs. Unsure if a sheeter is right for you? Try-before-you-buy with our RS101 rental scheme before committing.

Why choose a Japan Kneader Dough Sheeter?

Precision-engineered in Japan, these dough sheeters are designed to deliver consistent, professional results with every batch. Built from high-grade stainless steel with durable roller boards, they are compact, washable and made to last.

Consistent, professional results

A Japan Kneader sheeter guarantees even thickness and smooth laminations, giving your croissants, puff pastry and viennoiserie the structure and definition they need. Choose from the standard white board or the heavy-duty blue board, which adds grip and durability for intensive use.

Durable by design

These machines are made for years of reliable use. They are easy to clean, compact for small kitchens, and uniquely allow dough to be rolled while kept cold – making it easier to control and faster to prepare.

Compact but capable

With their small footprint, Japan Kneader sheeters are ideal for artisan bakeries, pastry kitchens and ambitious home bakers. The RS101 suits smaller batches, while the larger RS201 offers more capacity and folds neatly into a briefcase-sized box for efficient storage.

UK service centre

BakeryBits is the official UK repair and service centre for Japan Kneader dough sheeters – although their build quality is such that servicing is rarely needed.
