Nuttimalt

Nuttimalt is malted wheat that has been steamed, micronised and coarsely cut, giving it a distinctive kibbled texture and a gently nutty malted cereal flavour. It is a useful baking ingredient when you want to add both texture and appearance, rather than just the flavour effect of a fine malt flour.

Its coarse particles vary in colour from creamy white to dark brown, which helps give bakes a more varied and attractive finish. Nuttimalt works well in breads and rolls where you want extra bite, a little visual contrast and a subtle malty depth. It can be mixed into dough or used as part of a topping.

Because it is non-diastatic in practical terms, its main role is texture, appearance and flavour rather than dough activity. That makes it an easy ingredient to use when you want character and crunch without changing the behaviour of the dough in the way an active malt might.
