The Rye Baker - Classic Breads from Europe and America
The Rye Baker is an excellent book. We've been using recipes from it over the last few months and have found it to be clear and reliable - and more importantly, the recipes are delicious. I've been making the Hearty Seeded Rye regularly to send to my vegan daughter at university (it improves over a day or two so is ideal for sending). Very well received. I've made various others, all successfully. If you want evidence of the variety and quality of rye loaves that you can make at home, this is the book to read. Patrick
The recipes included are very broad reflecting the use of rye over Europe for centuries and North America as it travelled across the Atlantic. Recipes include Caraway Beer Bread, Dakota Norwegian Rye, Salty Rye Rolls and Westphalian Pumpernickel. Lots of techniques using soakers and rye starter to demonstrate just how versatile this grain is.
