Organic cracked rye from Gilchesters Organics — UK-grown heritage rye, cleaned and cracked so it’s ready to use straight away (no home milling required).
Why you’ll like it: cracked rye brings a deep, malty rye character and a satisfying bite. Use it to build flavour in sourdoughs, add texture to mixed-grain loaves, or make a simple rye soaker.
Best for: Sourdough.

How to use: For the best texture, soak in equal weight water for 4–12 hours, then add (with soaking water) to your final mix.
Baking tip: Start around 10–20% of total flour weight as cracked rye/soaker, then adjust depending on how bold you want the rye flavour.
Also great as a topping: lightly toast and sprinkle over seeded loaves.
