Molino Bongermino has roller-milled and re-milled the best Italian organic durum wheat, giving a fine, yellow flour suitable for bread making. It's semola rather than semolina - milled from the same hard durum wheat except that semola is re-milled (or twice-milled - rimacinata) to make a very fine flour, whereas semolina is much coarser (still nice in bread).
