Gilchesters Organics Pizza and Ciabatta Flour

Rooted in Northumberland, milled at Duchess Farms. Gilchesters Organics was founded in 2007 at Gilchesters Farm near Hadrian’s Wall, by organic pioneers Andrew and Sybille Wilkinson. In early 2023 the brand moved to Duchess Farms, who relocated the original milling equipment and continue the same small‑batch, stone-milled approach on UK organic grain — still sourcing grain from the original founders alongside an expanding network of organic farms.

Why you’ll like baking with it: Strong and extensible for high-hydration doughs, with lovely colour and chew. It’s a great match for pasta, bread and pizza, and shines in slower ferments where flavour has time to develop.
