Rooted in Northumberland, milled at Duchess Farms. Gilchesters Organics was founded in 2007 at Gilchesters Farm near Hadrian’s Wall, by organic pioneers Andrew and Sybille Wilkinson. In early 2023 the brand moved to Duchess Farms, who relocated the original milling equipment and continue the same small‑batch, stone-milled approach on UK organic grain — still sourcing grain from the original founders alongside an expanding network of organic farms.
Why you’ll like baking with it: More flavour than white flour with excellent lift — perfect for everyday loaves and bakes. It’s a great match for cakes and bread, and shines in slower ferments where flavour has time to develop.

What to expect: A slightly darker crumb with extra flavour, while still rising beautifully.
Handling:Stoneground flour tends to absorb a little differently — give the dough time to hydrate (an autolyse helps).
Milling note:Stoneground on organic grain (no bleaching agents; no improvers).
Quick tip: If you’re switching from roller‑milled flour, adjust water by feel — give the dough 10–15 minutes to settle, then tweak.
