FARINATA (chickpea pancakes) recipe from Fausto Marino
Mix 500g chickpea flour in 1600g water taking care to avoid lumps. Add salt to taste and leave to rest for about 4 hours.
Remove any foam from the surface. Pour into a shallow and wide pan, preferably copper, with a small glass of oilve oil and mix until evenl.
Put the tray into a oven pre-heated to 200C. Bake until just set. Serve hot with a sprinkling of pepper.
Optionally, add add finely chopped onions, rosemary or peppers to the mixture before baking.
